Why not...

use Birthday as your first word? Then you will have a two-syllable word without having to ignore the third syllable in X-mas
Day? Unless of course, you want to say X-mas day for a particular reason? In that case, why not just say X-mas?

I checked it with the app

I checked it with the app syllable counter more than twice, it makes Xmas as 1 syllable, I originally had Yuletide but it came out 3 syllables rather than the required 2?
Could it be wrong?
I see it counted both ways, I will edit thanks.

Cinquain calls for 2 syllable word to begin and end with.

Hmm...not certain why the syllable app would give Xmas a one syllable count, nor give yuletide 3 syllables. That's a quandary! I would agree that Xmas is 2, yuletide is 2, and also toss in the option to perhaps use "Noel." Just a thought.
